Easy Homemade Pancakes

  • 1 cup All-Purpose flour
  • 1 tablespoon Lakanto Classic Monkfruit Sweetener
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • 2 tablespoons Butter
  • 1 large Egg
  • 1 tablespoon Coconut oil
  • extra Coconut oil for cooking


  • Add your dry ingredients to a large mixing bowl. Melt your butter and coconut oil together.
  • Add all wet ingredients to the dry ingredients and mix well. (feel free to add a bit more milk if you feel your mix is too thick)
  • Heat a pan over medium to medium-high heat and melt coconut oil in the pan
  • Using a 1/3 cup measuring cup, ladle out the pancake batter into the pan cooking on the first side until you see bubbles forming on the top. Flip over and cook an additional minute or until golden brown.
  • Finish with the remaining batter and then serve.
  • Top with whatever toppings you'd like!
